Ingredients
- 2 portions of Brown rice penne
- 1 box of Cherry tomatoes
- 1 box Fresh brown mushrooms
- 1 box Fresh spinach
- 1 cup of tomato puree
- 3 cloves of Garlic
- The juice of half a lemon
- 1 tsp Paprika
- 1/2 tsp Cayenne pepper
- Chili flakes ( optional )
- salt & Black pepper to taste
Instructions
- Start by boiling your pasta according to instructions.
- Roughly chop garlic, cherry tomatoes & mushrooms.
- In a pan, sauté the garlic in olive oil with some salt, then add the tomatoes and the mushrooms and sprinkle some cayenne pepper and paprika (as much as you like).
- Once those have cooked nicely(i prefer the vegetables to keep a firm consistency) add the tomato paste and let sit for a couple of minutes before adding as much spinach as you like.
- Turn off the heat after adding the spinach. Allow spinach to wilt a bit from to the heat.
- Combine sauce with pasta and enjoy with chili flakes, black pepper and a squeeze of lemon juice.
