FOR THE SALAD:
- 1 cup cooked quinoa
- 1 avocado
- 10 cherry tomatoes
- 1/2 cup cooked black beans
- 1 can of corn
- 1 red onion diced -handful of cilantro
- *you can also add goat feta if you eat dairy
FOR THE DRESSING:
- 1/8 cup lemon juice
- drizzle of olive oil
- 1 full tsp cumin
- salt & black pepper to taste
