Ingredients

FOR THE SALAD:

  • 1 cup cooked quinoa
  • 1 avocado
  • 10 cherry tomatoes
  • 1/2 cup cooked black beans
  • 1 can of corn
  • 1 red onion diced -handful of cilantro
  • *you can also add goat feta if you eat dairy

 

FOR THE DRESSING:

  • 1/8 cup lemon juice
  • drizzle of olive oil
  • 1 full tsp cumin
  • salt & black pepper to taste

Instructions

not much instructions here, but this is a great make-ahead salad that gets better a few hours after mixing in the dressing. awesome for an easy office lunch!
