The Ultimate Quinoa Salad

Of all the quinoa salads i’ve had & made, this is by far the yummiest!! The salad mix itself is simple, the dressing however, is the highlight of this salad!

Ingredients

For the salad

*Adjust quantities as much as needed

  • cooked quinoa
  • Chopped romaine lettuce
  • Baby rocket leaves
  • Multi-color bell peppers
  • Green onions
  • Cherry tomatoes
  • sunflower seeds
  • oven-roasted sweet potatoes

For the dressing

  • 2 avocados
  • 2 tablespoons pesto sauce
  • the juice of 1 lemon
  • chili powder (optional)
  • splash of water

 

Instructions

Mix the dressing ingredients in a high-speed blender to have a creamy sauce. Thin it out with additional water splashes if it seems too thick.
