Pumpkin & Sweet Potato Soup

Ingredients

  • 1 medium-sized pumpkin peeled and diced
  • 4 small-sized sweet potatoes peeled & diced
  • 1 medium sized white onion chopped and diced
  • 2 cups of coconut milk or cream if you like a thick soup
  • 1 tablespoon of coconut oil
  • 2 tablespoons of grated ginger
  • 1 tablespoon of turmeric
  • ¬†salt & black pepper to taste
  • Pumpkin seeds for garnish

Instructions

  • Start by boiling the diced pumpkin & sweet potatoes, meanwhile cook the onion with coconut oil until it becomes translucent.
  • once the pumpkin & potatoes have cooked, transfer in the onion & use a hand blender to blend everything together.
  • Put the mixture back into your pan, add the coconut milk, spices & salt, stirring well to bring everything to a boil.
  • You may need to add more milk or water if the soup is too thick.
  • Top the soup with pumpkin seeds & extra black pepper & enjoy a heartwarming comfort bowl!
