Ingredients
- 1 medium-sized pumpkin peeled and diced
- 4 small-sized sweet potatoes peeled & diced
- 1 medium sized white onion chopped and diced
- 2 cups of coconut milk or cream if you like a thick soup
- 1 tablespoon of coconut oil
- 2 tablespoons of grated ginger
- 1 tablespoon of turmeric
- salt & black pepper to taste
- Pumpkin seeds for garnish
Instructions

Start by boiling the diced pumpkin & sweet potatoes, meanwhile cook the onion with coconut oil until it becomes translucent.
- once the pumpkin & potatoes have cooked, transfer in the onion & use a hand blender to blend everything together.
- Put the mixture back into your pan, add the coconut milk, spices & salt, stirring well to bring everything to a boil.
- You may need to add more milk or water if the soup is too thick.
- Top the soup with pumpkin seeds & extra black pepper & enjoy a heartwarming comfort bowl!
