GF Blueberry Muffins

Ingredients

  • 1 pack of fresh blueberries (150 grams)
  • 3 bananas
  • 3 tbsp plant-based milk
  • 3 tbsp melted coconut oil
  • 2 tbsp honey or maple syrup
  • 200 grams of GF oat flour or Gluten-Free flour mix
  •  2/3 cups coconut sugar (75grams)
  • 1tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract or powder

Instructions

  • in a large mixing bowl, start by mashing the 3 bananas.
  • Add the remaining wet ingredients: milk, sweetener & coconut oil & mix well to remove all lumps
  • add the dry ingredients one by one and mix thoroughly -finally fold in the blueberries & give a quick final mix
  • add the batters into a muffin baking pan & bake for 30mins at 180C
  • the muffins should be slightly golden & fluffy when they are done
