Ingredients
- 1 pack of fresh blueberries (150 grams)
- 3 bananas
- 3 tbsp plant-based milk
- 3 tbsp melted coconut oil
- 2 tbsp honey or maple syrup
- 200 grams of GF oat flour or Gluten-Free flour mix
- 2/3 cups coconut sugar (75grams)
- 1tsp baking soda
- 1 tsp baking powder
- 1/2 tsp vanilla extract or powder
Instructions
- in a large mixing bowl, start by mashing the 3 bananas.
- Add the remaining wet ingredients: milk, sweetener & coconut oil & mix well to remove all lumps
- add the dry ingredients one by one and mix thoroughly -finally fold in the blueberries & give a quick final mix
- add the batters into a muffin baking pan & bake for 30mins at 180C
- the muffins should be slightly golden & fluffy when they are done
