GF Chocolate Chip Pancakes

    6 to 8 pancakes

Ingredients

  • 1 cup of oat flour
  • 1/4 cup coconut flour
  • 1 cup almond/coconut milk
  • 1 mashed ripe banana
  • 1 tablespoon of coconut sugar
  • 1 cup of dark chocolate chips (70% or above)
  • 1 organic egg
  • 2 tablespoons of baking powder
  • some vanilla extract

Instructions

  • Mix dry ingredients together, and wet ingredients in a different bowl, then combine well.
  • Add the chocolate chips once the mixture is done and give a quick toss.
  • Use a bit of coconut oil in your pan and flip those pancakes away! – a couple of tablespoons of batter per pancake
  • Enjoy with maple syrup, and any kind of fruits you like!
