Ingredients

FOR THE CAKE
-1 cup coconut flour
-3/4 cup oat flour
-1 1/4 cup coconut sugar
-1/4 cup melted coconut oil
-1/2 cup cacao powder (i use raw)
-1 cup of almond milk
-4 organic free-range eggs
-1 tablespoon baking powder
-1 tablespoon apple cider vinegar
-a dash of sea salt

*you can sub eggs with flax eggs to keep this cake vegan but the cake won’t be as fluffy

FOR THE ICING
-100grams 70% dark chocolate -Half a can of coconut cream or 1 cup of coconut milk depends how thick you like it

Instructions

  • In a mixing bowl, start by combining all the dry ingredients, make sure you remove all lumps form the flour, and set aside.
  • Combine wet ingredient in a different bowl, then add wet ingredients to dry ingredients and mix well.
  • Bake for 45 mins on 180C or until toothpick comes out clean
  • Meanwhile, melt chocolate in a saucepan with the cream or the milk. Be careful the chocolate can easily burn.
  • Once cake is done, top it with the icing, any berries you like and some pistachios.
