Ingredients

-1 1/2 cups of blanched raw almonds or raw cashews⁣
-1 cup grated coconut ⁣
-1/3 cup honey, maple syrup or agave⁣
-1/4 cup coconut oil⁣
-2 tbsp lemon juice⁣
-2 tsp grated lemon peel⁣
-1/4 tsp baking soda⁣

Instructions

-place all the ingredients in a blender & blend until you get a ball of dough. It should be soft enough with the nuts almost totally broken down.⁣
-Shape your cookies using approximately 2 tablespoons of dough & place on a baking tray lined with parchment paper.⁣
-Bake at 170-180C for about 12 minutes⁣
