Quick lunch pasta

An easy & delicious pasta you can quickly make for lunch!

Ingredients

  • 2 portions of Brown rice penne
  • 1 box of Cherry tomatoes
  • 1 box Fresh brown mushrooms
  • 1 box Fresh spinach
  • 1 cup of tomato puree
  • 3 cloves of Garlic
  • The juice of half a lemon
  • 1 tsp Paprika
  • 1/2 tsp Cayenne pepper
  • Chili flakes ( optional )
  • salt & Black pepper to taste

Instructions

  • Start by boiling your pasta according to instructions.
  • Roughly chop garlic, cherry tomatoes & mushrooms.
  • In a pan, sauté the garlic in olive oil with some salt, then add the tomatoes and the mushrooms and sprinkle some cayenne pepper and paprika (as much as you like).
  • Once those have cooked nicely(i prefer the vegetables to keep a firm consistency) add the tomato paste and let sit for a couple of minutes before adding as much spinach as you like.
  • Turn off the heat after adding the spinach. Allow spinach to wilt a bit from to the heat.
  • Combine sauce with pasta and enjoy with chili flakes, black pepper and a squeeze of lemon juice.
