Ingredients
2 portions of Brown rice penne
1 box of Cherry tomatoes
1 box Fresh brown mushrooms
1 box Fresh spinach
1 cup of tomato puree
3 cloves of Garlic
The juice of half a lemon
1 tsp Paprika
1/2 tsp Cayenne pepper
Chili flakes ( optional )
salt & Black pepper to taste
Instructions
Start by boiling your pasta according to instructions.
Roughly chop garlic, cherry tomatoes & mushrooms.
In a pan, sauté the garlic in olive oil with some salt, then add the tomatoes and the mushrooms and sprinkle some cayenne pepper and paprika (as much as you like).
Once those have cooked nicely(i prefer the vegetables to keep a firm consistency) add the tomato paste and let sit for a couple of minutes before adding as much spinach as you like.
Turn off the heat after adding the spinach. Allow spinach to wilt a bit from to the heat.
Combine sauce with pasta and enjoy with chili flakes, black pepper and a squeeze of lemon juice.
